Vegan Sandwiches Save the Day: Book Giveaway & Blog Tour of Wonder!

Oh, hello.

This post is a whole trio of firsts: my first time breading with cornflakes, my first blog tour, and shockingly, my first cookbook giveaway. Who saw that happening?! 

Well, it’s all in honor of an enthusiastic, satisfying and beautifully photographed cookbook from two fellow bloggers: Tamasin Noyes and Celine Steen’s Vegan Sandwiches Save the Day. Both Tami and Celine have an array of delicious cookbooks under their non-leather belts. Vegan Sandwiches, their first joint effort, is an exciting, equally nerdy and novelty-worthy, totally sandwich-focused (okay, that does mean wraps, burgers, open-face selections, and everything that goes in them – and more) cookbook, which means you are now at the end of its blog tour!

With that, I’d like to share some of my experiences from the book so far, which includes sandwich-type things from around the world, spreads, sauces, slaws, marinades and homemade seitans. Speaking of, I’ve now made the Gobbler slices, Smokey tomato mushroom, and No Cluck cutlets, and dude, I liked the hearty No Clucks so much that I made my non-vegan sister a batch to keep in her freezer…and she lives across the country.

What follows is merely a selection – with more, no doubt, to come. And if you’re here for the giveaway, stare at these photos, starting with last night’s Retro KFC-style dinner, and then read the not-so-fine print below.

  1. 1. Vegan Ruben: homemade marble bread, melty soy cheese, corned beef-style seitan, homemade thousand island dressing, sauerkraut. Sandwich press it like crazy!
    2. Creamy peanut butter, 7 grain toast, banana. You’ve gotta squish it so it’s all compact and gooey.

  2. Hmm. Two sandwiches.
    1. Soy nut butter & banana (similar to Sarah but I’m allergic to peanut butter so I eat soy butter).
    2. Vegan BLAT: tempeh bacon, lettuce, avocado, tomato 🙂

  3. 1. hamburger rolls with noochy scrambled tofu, Mozza Daiya, fresh and juicy tomatoes, alfalfa, lettuce (lots of it) and vegan mayo.
    2.Grilled eggplant, zucchini and red bell peppers with hummus, and a herby olive oil dressing in a huge submarine.

  4. I’m really looking forward to leftover Thanksgiving Burgers (mashed potatoes + stuffing + green beans + fried onions), topped with tofurky slices and smothered in gravy. Also: a tempeh bacon BLT with spinach and other greens is sounding quite good after that Almighty BLT pic!

  5. I wish I could eat the BLT that used to be on the menu of a local(ish) vegan restaurant, which was filled not with tempeh bacon, but with their fantastically smoky and crispy coconut bacon. It was truly amazing!
    My second sandwich of choice would be a grilled-cheese on gluten-free bread, with spinach and tomatoes. Hm, yes, that would be good!

  6. 1. Almond butter, kiwi slices, generous sprinkle of cinnamon on thick slices of dense 7 grain bread, warmed up so the almond butter gets just slightly melty and you can smell the cinnamon goodness.
    2. Pesto-stuffed giant grilled portobello with a big slice of tomato and lettuce on toasted millet bread.
    Thanks for sharing the photos, especially the breaded tofu. I gotta share that with my brother to help lure him to the vegan side. 😉

    I would really love a grilled cheese sandwich on pumpernickel, with a tomato. And second I would like a po’bo with gravy dripping all over. Third, optional selection, anything on marble rye!

  8. 1) Avocado on toasted Silver Hills bread, slathered with a mix of balsamic vinegar and lemon juice, then topped with fresh ground black pepper and sea salt. Open face. So simple and soooo good!
    2) Toasted rustic cranberry bread, with spicy hummus, spinach, cucumber, and fresh ground black pepper. Love the sweet and spicy combo of dried cranberries (in the bread) and chill pepper hummus!

  9. Ok…. PB&J, but with PB& Co’s Dark Chocolate Dreams peanut butter, strawberry jam, and Dave’s Killer Bread.
    THEN… a grilled veg sandwich with a pesto sauce on a toasted baguette.
    Now I’m drooling!

  10. Aaagh, I’ve just eaten breakfast but those pics are torturing me! I’ve been following the blog tour longingly and ogling over the amazon look inside feature!…We can’t get fancy vegan sandwiches in any restaurants over in England sadly so I definitely need this book 🙂
    2 sammies I want to eat for lunch next week:
    1.One of those breakfast burritos which sound so scrummy- warm tortilla wrap stuffed with tofu scramble, spicy black beans, grilled peppers,crispy pan-fried potatoes, salsa…and cheezy sauce.
    2. “Fish finger” Sammie- breaded, fried tofu, and a homemade tartare sauce- vegan mayo mixed with a little kelp flakes/capers/pickle and a good squeeze of lemon.
    Why haven’t I made that before??!!

  11. I would love to try

    1. Navajo Tacos! Seitan Chorizo? YUM! Imagine the topping possibilities!
    2. Crispy Leek-Mushroom Mania Sandwiches are also calling my name. Made my own delicious batch of fried shallots for a take on green bean casserole this thanksgiving and am craving anything else fried and oniony.

    (also dying for ideas for yummy, quick vegan breakfast sandwiches)

Where I’m working right now we have a cook so I can’t really plan what I’ll eat this week but we have soup and sandwiches every lunch so this past week I smeared squash on fresh flax bread and dipped it in a vegan split pea soup– I’m the only vegan in this group of 30. On another day I had left over curry lentils with sweet pickled garlic scapes on an open face sandwich.

  13. 1. tea smoked tofu sliced super thin, layered with baby spinach + jalapeno jelly on nutty whole grain bread; 2. roasted veggies with peanut butter curry sauce, shredded lettuce + kimchi on a sourdough roll.

  14. Two sandwiches that I’d like to eat for lunch next week:

    1) Avocado, lettuce, tomato with Veganaise, spruced up per the inspiration of your photo with pickled jalapeno slices and LOTS of sriracha. Since I just ate the last of 4 sammies that included PPK chickpea cutlets, I’ll leave them off next week.
    2) Tempeh sloppy joe with a splash of bbq to back the liquid smoke. I may even add melted (vegan) cheddar just b/c I can. I know it’s not your choice, but I’d add Daiya.

    I really wanted to go fluffernutter, but that’s more appropriate for dinner.

  15. 1. layonna chicken pepper steak slices–pan fried, yellow rose recipes’ chiptole sandwich spread, avocado, butter lettuce, tomato, toasted hoagie roll.
    2. vegan diner’s smoky soy curls, earth balance, whole wheat toast!

  16. OMG, sandwiches, SANDWICHES.

    I want….
    -whole wheat sourdough, toasted, with a generous shmear of vegenaise, a fresh tomato, spinach, lots of freshly cracked black pepper, and some thinly sliced beer-and-chile-pepper-marinated tempeh. Nommmm.
    -vegan tuna salad (chickpeas, arame or dulse, old bay, vegenaise) on super toasty crusty bread with a salad on the side. mmmmm mmmm good.

  17. Hmm. I think I’ll put down my two favorite sandwiches from restaurants that I can’t get anymore:
    1. Advanced BLT (from The Otherside Cafe in Boston, now closed) – Fakin’ bacon, avocado, onion, tomato, lettuce, basil, and tomato-basil vinaigrette on sourdough bread
    2. Grilled tofu sandwich (from Flour Bakery in Boston, which has removed it from their menu) – grilled tofu, olive tapenade, spinach on fresh baked bread.
    I miss them both. 😦 Luckily Flour still makes #2 as a special from time to time.

    1. roasted tomato, avocado, & hummus sandwich
    2. Simple TLT with tempeh, nayonaise, lettuce, and tomatos

  19. 1. Thinly-sliced seitan, avocado, red onions, and pesto on toasted ciabatta.
    2. Vegan “meatballs,” soy mozzarella, olives, lettuce, and marinara sauce on crusty Italian bread.

  20. 1. An avocado reuben! Use the best rye bread out there, smother with vegan 1,000 Island dressing (homemade, of course) and sauerkraut, thinly sliced ripe avocado, and tomato. Yum!
    2. A “meatball” sub with thick, delicious marinara sauce and a homemade vegan cheese.

  21. Oh. My. Goodness. I cannot stop thinking of those cutlets in a cordon bleu style sammitch on a bun…drooooooool…
    And that smokey tofu! Smokey tofu! Egads. On a hoagie, with a fat slice of homegrown tomato (I’ll just dream of this one ’til Summer), spicy mustard, Vegenaise. I repeat: Oh. My. Goodness. 😉

  22. Two sandwiches I’d like to eat next week: Well of course Brass Tacks Velveeta Underground…. yum yum yum carmelized onions, homemade seitan, cashew chedda’ mmm.
    I’d also love to use the kfc style no-cluck seitan, with tempeh bacon, on crispy crusty ciabatta with garlic vegan aioli, and spicey pickles.

  23. What delicious photos – looks like a fantastic book, too. I can always dig into a tempeh bacon, avocado, tomato, red onion, arugula and vegan mayo sandwich (the challenge is getting it into one’s mouth) and lately I’ve been craving crunchy almond butter spread on a whole wheat tortilla (that has been gently warmed) sprinkled with hemp seeds and topped with either thinly sliced apple or chunks of banana.   24. I would love to eat an avocado and tomato sandwich on sprouted grain bread. For my other one, a daiya vegan grilled cheese sounds good–with tomato soup.

  25. Well if I could have any two sandwiches I would have:
    1. The “egg” salad sandwich I had in Las Vegas at the Wynn it had a hint of dill in it, a few very fine red onions, and the perfect texture.
    2. The Almighty BLT, with its own special spread pictured above. What is that spread?! It looks like chipotle mayo.

  26. I have got realized that around cameras, exceptional sensors be an aid to focus mechanically.   27. Every once in a while I would get a hankering for an egg salad sandwich and I haven’t had one in years, the sandwich. So an eggless salad sandwich that tastes like the real thing, not an egg white salad sandwich. I also haven’t had a roast beef sandwich in so long I can’t remember when, but if there was a veganized version I might want it. What I do like is Tofurky slices with a little bit of vegan mayo, lettuce leaf and cranberry sauce! So there, pick two from those three. =)

  28. I just made a tofu sloppy joe sammie with a dollop of vegenaise and sliced avocado. It was SO good. My second favorite sandwich has got to be a tempeh Reuben and a new Jewish food truck opened recently here that supposedly has a good one. I’m going to give it a try next week!

  29. This week I will have a vegan BLAT with smokey tempeh and avocado as well as a vegan “egg salad” sandwich made with tofu, Veganaise, relish, and black salt.

  30. I’m pretty boring:

    I’m fond of peanut butter & dark agave nectar on whole wheat bread or olive tapenade and spinach on some crusty peasant bread.

  31. I love to pile a grain of whole grain toast high with a variety of fresh vegetables like red bell pepper, sprouts, tomato, lettuce, cucumber, hummus and whatever is in season.
    A good old fashioned PB&J.

  32. Bahn mi on a crusty baguette, crunchy daikon pickles, jalapenos, warm tofu, and dressed with a light hand of vinegar and cilantro. Heaven!
    And the simple, ever-pleasing (to me)sandwich is avocado smushed on homemeade bread with mustard. I might be weird 🙂

  33. yi – tangy tempeh special: Organic tempeh sliced/diced & fried in a bit of oil then splashed with Shanxi superior mature vinegar toward the end. Sliced/diced & fried tomatillos and jalapenos. Layered roma lettuce inside vegan pita bread and stuffed with the fried tempeh, tomatillos, and jalapenos. Size to desire and hunger.
    er – corn bread sandwich twang: Corn bread mix, with corn and jalapenos into a low pan to bake about one to two inch thin. Slice a cirlce or square to the size sandwich desired and separate halfs. The corn bread cannot be too dry and crumbly; moist and solid makes a better sandwich. Fry chopped walnuts, then use the oil residue to fry thin sliced tofu adding a splash of Shanxi superior mature vinegar toward the end. Apply the tofu and walnuts to one half of the corn bread and sprinkle Galaxy’s Mexican style vegan shreds and top off with the other half. A few moments in an oven or micro wave to melt the shreds and off to tasty land.

  34. 1. I would love to eat a baked tofu sandwich on a warm baguette with a pesto spread and roasted portobellos.
    2. I would love to finally be able to make the perfect vegan reuben!

  35. I really really want to make the 2 following (yummy!) sandwiches this weeks:
    1) Avocado blt: Toasted organic sourdough bread, Vegenaise, tomato, lettuce, tempeh bacon and avocado
    2) Black bean fajita-burrito: home made refried black beans with sauted bell peppers and onions in a whole wheat tortilla with Daiya cheddar and guacamole and shredded lettuce. Yum!

  36. Okay, hands down…i’m yearning for the KFC retro and the no cluck cutlets. I just reurned from China and it was so sad to see how crowded every Kfc was. Maybe the retro and no cluck could give some compitition!

  37. Mmmm. my fav sammich right now is tofu sauteed in bbq sauce with grilled portabella and onions and whatever veggies i have on hand… but that kfc style dinner looks bomb, and i want to wrap it up in a tortilla and eat it like a sandwich!:) yum.

  38. I want to eat a pbj sandwich made with natural pb and raspberry jelly on a homemade biscuit and a sauteed portabella mushroom sandwich with kale, carrots, onion, avocado, and green peppers in whole wheat pita bread.

  39. 1. A kamut or spelt pita bread filled with lots of hummus, lots of mesclun, black olive & fresh tomatoes sliced
    2. Grilled eggplants, zucchinies & red bell peppers with lots of hummus and fresh herbs on whole grains baguette

  42. 1. falafah sandwich with tahini dressing w spinach, shredded carrotts, cucumbers, radishes, tomatoes
    2. baked marinated tofu sandwich w alfalfa sprouts, carrots, cucumber, lettuce, veggie mayo/cashew cream, shredded beets and soy bacon crumbles on gluten free sprouted wrap. thanks
